Pop-ups pop off around the city

Some of the festival's most exciting events put the spotlight on the people behind the plate. Capitol's Gustioso is a seasonal four-course feast celebrating local produce, while Le Bouillon Bel Air partners with French mustard house Maille for a series of classic bistro lunches. Over at Supra, mystery guest chefs take over the kitchen for a fortnight of collaborations featuring some of New Zealand's most respected culinary talent. Looking to the future, Everybody Eats' annual Next Gen Cook Off hands the pass to four emerging chefs, who create pay-what-you-can dinners using rescued ingredients.

Pull up a stool and settle in. Regent's Good Craic celebrates Irish hospitality with Guinness, whiskey, comfort food, and live music. Little Beer Quarter becomes The Siren Song Tavern, a month-long maritime pop-up serving seafood, craft beer, and tavern fare inspired by life on the waterfront. Meanwhile, Garage Project and Le Marché Français reunite for Cheese Bar, pairing French and local cheeses with carefully matched beers.

There's plenty of options if you're looking for a small bite that packs a big punch. Konbini Moments at Orient takes inspiration from Japan's convenience stores, with onigiri, sandos, mochi doughnuts, and melon pan on the menu. At Swimsuit, The Tuck Shop transforms nostalgic Kiwi favourites into gourmet treats. Amuse Your Bouche at Amuse rounds things out with vermouth and pintxos (Basque bar-style snacks designed for grazing).

Some foods are simply made for eating with your hands.  Mo'dogs serves globally inspired hot dogs from a cart at Moore Wilson's, while Interislander's travelling Ferry Tale pop-up dishes up a generously sized Wairarapa lamb burger. At LTD., The Flipper reimagines the classic fish and chip shop with a menu full of nostalgic favourites. Looking for variety? Delivereasy's Talk of the Table at Glou Glou brings together festival burgers from across the city for a night of food and friendly debate. Miramar Taco'ver transforms the laneway beside Double Vision Brewing into a Mexican street fiesta, complete with taco vendors, live entertainment, and the first taste of three festival beers brewed especially for Visa Wellington On a Plate. The only challenge is deciding where to start.
